I have still been eating meat but I do try to keep my portions in check. I don’t think this goal will really come to fruition until I have a job and am able to afford buying more of my own food, as well as having figured out how to make a variety of excellent meals without meat. I think cutting portions for now is a good start and I am tending to avoid the red meat as much as possible and stick to turkey and chicken.

How I did it: I actually just ate meat today for the first time in a week, actually, because I was really upset and stressed out, and my (vegetarian!) friend brought them to me as a cheer up president. How I did it: I simply decided that I wanted to eat less meat, and began doing so. I seldom buy meat to cook at home, and if I do, it's chicken or fish. I don't eat pork or beef at all (with exception to the occasional hamburger on the grill, and that's very rare). I still eat eggs, and I eat a lot of nuts and potatoes instead of meat. How I did it: I generally eat less meat now. I started out pretty hardcore but have slacked some on it recently. When I was mainly eating fruits and veggies, I felt worn out and couldn't concentrate. I was reading a pamphlet about vegetarianism and the problems which meat eat contribute to, such as heart disease. I don’t think that I want to cut it out of my diet completely because it’s so damn good but I think moderation is the key to most things in life, so I’d like to cut down on the amount I eat because it’s a part of most of the meals that I eat. I know there are plenty of meatless dishes that I absolutely love and so I don’t think the transition will be terribly difficult and I can do it at whatever pace I feel comfortable with. I’m not going to dive in head first but would like to read some more literature on the benefits and how to maintain a healthy, balanced diet without the protein and other things provided by meat. I’ve already been trying to cut down and focus more on the fruits and veggies. I just had dinner and I was about to get some popcorn chicken or polish sausage, but I took another look at the menu and saw a cheese tortellini dish and I thought “Why not? still tasty and without the meat.” So I did _
I am a highly carnivorous person known for eating the patty, leaving the bread, eating just the hot dog, just the steak. I would probably kill the deer if I could and eat it raw :). But I know that while eating some meat is good for you, eating too much isn’t. So I would like to limit my meat intake to around to twice a month and eat it as a treat.

Managed to pick a vegetarian option when I went out to eat Monday—I chose black beans and sauteed veggies on my quesadilla instead of beef or chicken. I mostly eat them for the guacamole side anyway!
This should be a fairly easy one! I’m just going to try to make all of the meals which I cook or buy for myself meat-free! That way I will only be eating meat if I am at someone else’s house and they are cooking for me. And once I get used to that then I can see if I want to move on to stopping eating meat altogether.

I am going to start by trying to eliminate meat from my lunches. Then I will move on to breakfast. I might never get past that, but that’s OK.
Got onto the Amazon website yesterday – went a little crazy – ordered some books I’ve been longing to read about Edgar Cayce and his health recommendations, angels, etc. and a book by some chick I saw on Oprah who is into vegan/vegetarianism (I forget her name). Can’t wait to read them!! Oh ya – had sushi last night (maki actually).

Made a type of tortilla dinner last night using refried beans, corn and cheese on whole wheat tortillas. Covered the rolled tortillas in salsa mixed with plain yogurt and topped with more cheese – pretty good. Would probably use sauteed peppers and onions to the filling next time.
