Small fridge, love to eat healthy, veggies and fruit going bad, not home for family dinners....help! 9 months ago

I love going to farmer’s market and getting wonderful fruits and vegetables. I have a 12 mo. old at home during the day, and so cooking is somewhat of a chore. I work at night, starting at 3 PM. I like to cook fresh meals, but my dear husband and I have opposite shifts, so we never get meals together except on my days off. Leftovers are OK, but I am not really hot on the whole idea of cooking meals and then freezing them for future use. I find that most of the vegetables and fruit that I get from the farmers market will go bad before they are completely used. I’ll have great ideas for what I will use them for, but then when it comes time to cook/use them, we aren’t always in the mood, or sometimes we forget altogether that they are in the refrigerator. They get buried behind things because the crisper drawers are SO SMALL, that we have to use whatever shelf is available.
Does anyone have a suggestion?

So does not buying to much at one time. Also what helps, I got this thing that you put in your vegetable drawer and it helps keep your fruits and vegetables longer. So far I think it’s doing what it’s supposed to do. I haven’t had to throw anything away in a while now.

i bought a crate of organic strawberries that looked delish. I even separated them into easy to carry containers….and i’m ashamed to say i haven’t touched them. i am not sure if i was strawberried out because i ate a lot last week when i bought them.

i even looked at new strawberries yesterday but didn’t buy them cuz i was ‘sceered’ i wouldn’t finish them.

so…thinking i need to come up with a weekly menu & it may help me when i’m shopping. cuz sometimes, i wander around in the grocery store because i have no clue what i want to eat….MENU NEEDED.

I am so horrible about this!! Really, all food I buy …eventually wastes away in my fridge. I did buy the most delicious crate of strawberries …those are not going to waste!!!

Planning ahead re: meals & purchasing accordingly helps a lot.

i mark it as complete.
there should be another list of ongoing goals like this one … well i can tag them “daily”.
i know for now best way for me is to wash, chop and pack them in advance. when i do it, i use my veggies, when i don’t, they just sit in the fridge.
next week we are determined to start using more greens.



Why do people do this? 16 months ago

Why? Why oh Why?
Why do I buy so many bags of lettece and so many apples and melons and carrots?
I never eat them.
I say “oh yes I will eat them staring this week all of them”
I come back from the grocery the next week with more and I just have to clean out the rotten food that I bought last week and never ate.
It’s digusting.
I WILL EAT IT!
(or at least stop buying it)

i stopped preparing veggies in advance and my scale recognized that, too! so i’m ready to stick with this, it helps me to prepare my meals in advance, it is worth it.



new: i chop it in advance 19 months ago

i know that vegetables should be chopped immediately before, but, chopped vegetable is better than no vegetable at all!

since i purchased douzens of take away containers, i wash, peal, chop all my veggies on the day of purchase. i use machine for chopping everything at once, and than i wash it. i wouldn’t bother to use it for small quantity needed for only one meal.

so i have full fridge of boxed veggies and i can prepare cooked meal, soup or salad very fast. yeah some (if not all) vitamins are lost but nobody’s perfect. some day i’ll grow organically my own food but today is today. and my scale recognizes it already! :D {big grin}

i also sprouted bunch of mungo beans and steamed it all, ate part of it and saved the rest into fridge for later. it is better than canned, nevertheless.

I love a good salad. But when I’m not home much the lettuce goes bad soooo quick!
