For lunch I had an almond butter sandwich and fruit. Tonight I ate rice, steamed veggies and gardein Chick’n Mandarin for dinner. Typically I dislike faux meats, but Gardein is pretty decent tasting, and has a good texture. Plus it’s fast, which is important when you’re eating with a yoga deadline in mind 15 months ago

I was a vegan for the first three days of this year. It got me reacquainted with hunger, if nothing else. While I appreciate veganism, I didn’t really enjoy it. Maybe not in this lifetime. I also noticed that after that, and another week of mostly vegetarian meals, my anemia flared up again. But having one vegetarian day a week, and a few veg* dinners, I think that’d be good for my health. 15 months ago
