I’m doing Ok here, but don’t think I’m quite making the daily requirement of 5-9 cups of vegetables (that’s what is recommended right? Need to check).
I seem to be eating a lot of spinach, cucumber, tomato, and celery, but I am starting to get bored and think I need to try some new veges and vegetable dishes.
My goal is to get clear on what the recommended intake of daily vegetables (and fruit) looks like. At the moment nothing is measurable and I can’t tell if I’m eating enough veges.
Also want to commit to cooking up some brand new vege dishes.

See photos – Enough said…steamed veggies instead of fries, Appletini and White choco raspberry cheesecake for dessert..umm, unfortunately, there’s no proof left on the plate where the cheesecake once sat (for a VERY short period of time)
All kidding aside, I’m doing fine with this one – likely be able to say “I did it” any day now…oh and btw, there is apple juice in the appletini…really, there is.

I haven’t had broccoli in a few weeks? What’s with that? I’ve got to get back on the broccoli train. I just wish D wasn’t so fussy…

I had fruit and a plain yogurt for breakie, and hommous for lunch, with about 250g of chocolate to finish it off…to be more specific, a Yorkie bar, and then a Fry’s turkish Delight. Now, I’m not a complete idiot, so I am perfectly aware that the choco in that copious amount will sort of cancel out any good I’m trying to do my body with the veggies. Like coffee, it’s a bit of an addiction. The only time I was really able to let it go was when I was preggers and the doc told me I was gestational diabetic and had to go on a strict carb-reduced diet. Hey, no problemo – if I never ate a potato, a slice of bread or a bowl of pasta again, I wouldn’t sweat it….but my beloved chocolate – this was killer!!!
Now because I’m at a in increased risk for Type 2 diabetes down the road, I know I shouldn’t be stuffing my gob with sugar – furthermore, seeing as I’m constantly bellyaching about the extra 20lbs I’ve retained since having the baby, I really ought to cut back.
Maybe I ought to rethink this goal – is it more veggies I actually need,or is it less chocolate??? I shudder to even consider setting a goal like that. Crap.

Went out with the girls to a swanky Italian place Saturday night and instead of having the carpaccio (yummmmmmm, raw beef!) I had a giant arugula salad, which was essentially the same as I eat at work almost every day of my life, with the exception of this swanky one having pecans in it..oh and giant pieces of shaved parmigianno.
I’m bringing homemade hummous today – that counts, right?????

As a mum and wife who works full time, I thought I would make life easier, not to mention more interesting, by purchasing a big old slow-cooker!!!! I’m sick to death of salads, and my husband and kids can’t get by on them so I made a giant pot of vegetable soup – Lovely comfort food in this frigid weather. I think I’m off to a blazing start to a more veggie-filled lifestyle!! So far, so good.
(ask me in a week or two though, when my body is begging me for a big, gross, fatty but oh-so-yummy burger!
