a bad week for healthy eating. ive had cravings and I gave in quite a bit this week. not proud. but yeah. id even call it a binge.

but this is my issue… im all or nothing… im either super strict on myself and I eat super healthy and super clean and enjoy it or I totally let loose and binge on and off for a few days. yes ive not cared what i ate i just ate what i felt like.

so next week i hope to make better choices again. i prefer to eat healthier. 6 days ago

strawberries & “cream”

this tastes like the real thing if not better.

just cut up fresh strawberries. mix some agave nectar with greek yoghurt (I use the Fage one), then mix with strawberries. and that’s it. tastes super yum and supper heathy. o% fat and no added sugar in the yoghurt. not a lot of sugar in agave. but u can also use a sweetner in stead. or can use honey.

its all good. for me its better than the real thing. 1 week ago

the most amazing healthiest chocolate mousse ever! 3 ingredients super simple. and healthy and its just unbelievable. esp cos of the main ingredient!

all u need is one whole avocado :), 2tbs unsweetended cocoa and 2 tbs agave nectar (or honey or maple syryp). stick all 3 in the blender and blend till a smooth chocolate consistency! and that is it. it looks and tastes like chocolate mousse (only a tiny hint of avocado flavour). its very rich and chocolatey.

I didn’t eat mine straight away yesterday… I decided to keep it in the fridge over night instead of eating it straight away at room temp. I think its better that way cos today it was a nice chilled mouse with a more solid chilled texture to it. it was so damn good. I had it when I got home after my workout this eve… it felt like I was eating a real chocolate mouse and such a treat.

1 avo makes 1 portion for 1 person unless u wanna share with someone.

seriously this is a new fave of mine for when I want a chocolate treat. out of all the healthy deserts ive tried, this is the most amazing. and so easy!

edit I tend to use this over a few days as “chocolate spread on rice cakes or wholemeal toast… a glorified healthy version of nuttella u could say.

also since making this I asked 2 people to first sniff it and then taste it… and both thought it was some sort of chocolate desert, but couldn’t make out the avocado in it. only after I told them and got them to sniff it and taste it again could they make out the avocado. 2 weeks ago

confirm… those yogurt oats I wrote about in my previous entry… I made them, I ate them… they were awesome.

ive made them 4, yes 4 times since! and officially one of my staples. the first time I made them (from that entry) I made them with frozen mixed berries… and whilst it was enjoyable… I found the berries to make it a bit “tart” so id have to add more agave to that to make it less. but the second time I made it, with fresh straweberries and it came out really much better and more sweeter.the 3rd time i made it, i added fresh pineapples to it, and it was so refreshing! im thinking of making that one again in future but maybe adding a teaspoon of coconut to it to make it more troppical and the 4th time I made it, I added a tsp of unsweetened cocoa powder and a half a block of my fave dairy free, vegan mint choc. I just added the choc shavings to it and it gives it a choc mint flavour. there are so many different fruits or toppings or flavourings u can add to them. and they are so filling and healthy.

i still have 2 more other healthy yummy desert type treats i want to try that look so divine but i haven’t had time to make them yet… so wont say nowt yet. the best thing about a lot of the stuff i make. is that its healthy but its also not expensive and its also quick to make. and its so tasty! 2 weeks ago


evoxusovernight yoghurt oats

i made this for the first time tonight… and will eat it for breakfast tommorow morning, so havent officially tasted it yet. but i think it will taste good. i have oats most mornings and i have greek yoghurt often. and this is a good source of fibre, carbs and protein, a good healthy breakfast.

so i took a packet of oats, through it in a mason jar, added 2 tsps chia seeds, 1 tsp flax seeds, through in some mixed frozen berries, added 3tbls water (you can add milk instead) then i added bout 250ml of greek yoghurt and some agave nectar (can use a sweetner instead) then stick the lid on the mazon jar and shake it all up or jsut stir if u like. stick it in the fridge and eat in the morning. apparently the chia seeds will expand and take on the flavour of whatever it mixes with. ive never used chia seeds before. i usually add flax seeds to my yoghurts and oats and protein shakes and i love that. looking forward to trying this tommorow morning as i need an alternative to hot oats in the morning. esp when summer is hear.

i usually will have hot oats with berries and an egg white omelete or oats with berries and scrambbled egg whites and some fruits. so this will be a good high protein breakfast meal to have. 3 weeks ago

one of my favourite healthy chocolate deserts i make and have jsut before i go to bed as a snack is this healthy chocolate desert. i have it jsut before i go to bed as one of the main ingredients is chocolate casein powder which is a slow releasing protein powder so it lasts longer over night. helping to build as well as repair muscles overnight.

anyway this is what it entails.

1 scoop chocolate casein powder
1tbls unsweetened cocoa
pinch salt
1/4 tsp baking powder
3tbls egg whites
1tsp sweetner
1tbls peanut butter
bout half cup of water

mix it all up, then stick it in the microwave, for bout 2.5 mins, but keep an eye on it as microwaves vary. then enjoy. its a yummy warm chocolatey desert. and my love for chocolate and peanut butter continues :) 3 weeks ago

home made healthy clean desert. i made some tonight. its based on the concept of the peanut butter cup.

basically i take 2 scoops chocolate whey powder, bout 4 teaspoons splenda or whatever sweetner u have. teaspoon unsweetened cocoa powder and about a cup of water. stick it in a blender or if u dont have one, just stick it in you shaker and shake it up till its blended. then i pour the protein shake mixture into small desert bowls. my recipe made 5 bowls. then i added a tsp of peanut butter into each bowl. it drops in and sinks into it. then you stick it in the fridge and let it freeze for an hour or so till its frozen. then u take it out and eat it. its like a seriously delicious healthy frozen peanut butter cup. so i will have one now for desert and the rest is in the fridge for the next few days.

next time i make it im gonna make it with casein powder as i tend to eat them as my last meal of the day at night… so i might as well make it count.

but yeah good stuff, healthy and feeds the sweet tooth craving. taste like choc ice cream with pb. and everyone knows the marriage between choc and pb is a match made in heaven.

ice green tea.

i may have posted this somewhere else. but thought i should put it here on this goal.

i make and drink this every day.

basically every night i boil 500mls of water in the kettle. pour it in a measuring jug, steep a green teabag in the water for a few minutes, i also add some matcha green tea powder for extra green tea goodness. steep and swirl it so all the good stuff goes in. let that cool in the jug for an hour or so. once its cooled down, i pour it in my water bottle and stick it in my fridge overnight. the next day i take it out the fridge and i take it to work to drink or i use it as my “water” to drink during my work out. this way i get a minimum of 2 cups of green tea a day, and it goes down really easy as a cold refreshing drink esp during a work out. on my rest days i just drink it normally with a meal, i even have it with my lunch at college. it looks distgusting, like spirulina etc but its all good for you, and you get used to the taste.

i also tend to make a cup of hot green tea with the same teabag i used for my iced green tea, the same night before i throw it away.

i love green tea, its an obsession, teabags, tablets, powders, and its helping with weightloss. 3 months ago

of the ways i love to drink my water at work and sometimes at home is… to pour a tall glass of water with ice, and then i take some slices of lemon and add it to it. and then i squeeze some more lemon slices into the water so that the lemon juice goes in, and then i also add fresh mint leaves to the water. and it makes a refreshing strong minty lemon drink. i get lots of comments on it, cos everyone sees my water glass with tons of lemon and mint in it. but i like it, and it helps when im thirsty ina busy restaurant. and i jsut top it up when i finish drinking it. 3 months ago

the recipe for my banana popsicles that i love so much AKA chocolate banana and peanut butter popsicles!

this is a healthy treat and much better to have instead of icecream or normal popsicles. in my opinion tastes just as good if not better. the banana once frozen gives the consistence/impression as if it were real ice cream. really good treat if u have a sweet tooth but dont want to be naughty!

this makes 4 portions.

ingredients

2 bananas
peanut butter
tsp coconut oil
3/4 blocks dark chocolate (also really good with mint dark chocolate)

basically u cut the bananas in half. then slice the halves vertically. then you spread some peanut butter on one of the banana slices. insert a skewer on the peanut butter spread. put the other banana slice on top. then secure them together. do that 3 more times so that you have 4 banana peanut butter skewers. i then wrap mine individually in some grease proof paper and put them in the freezer to freeze until firm.

once your popsicals are all the way frozen. take your dark chocolate and melt it with the coconut oil. i like to put it in a mug and put it in the microwave on a very low heat so that it doesnt burn. it needs to jsut melt. once that has melted, i take the banana popsicals out the freezer and hold them by the skewer and dip them into the melted chocolate in the cup. and keep dipping until the whole banana is covered. you will find that the chocolate hardens and dries within 3/4 seconds, due to the fact of the hot sauce on frozen banana. once these are done, u can enjoy immidately or pop back in the freezer, and have them when ever you feel like a “ice cream treat”. i actually still ahve one of these left in the freezer so i will prob have it now :)

i usually will have one after supper as desert :) seriously my favourite healthy desert. this is great for kids too.

made a delicious healthy chilli dish for supper tonight! a healthier take on traditional chilli con carne.

ingredients

1 onion
clove garlic
about a tblsp coconut oil
2 cans chopped tommatos
2 cans kidney beans
500g cubed chicken peices (minced in food processor)
chilli pepper (salt & pepper and any other spices herbs u want to add – i added some thyme and a bit of parsely)

traditional chilli con carne is usually served with beef mince i believe and rice… however i opted for no rice, and used chicken which i minced instead of beef mince. i served this with a cup of mixed veg instead of rice.

anyway basically saute the chopped onion in coconut oil in a pan (i used a wok). then once thats nearly done add the garlic… then add the chicken mince and cook till the chicken is no longer pink. then add the chopped tommatoes and the kidney beans. and finally all the spices to taste. once all mixed nicely… set to a meduim heat, cover and cook for 30mins.

serve with rice or mixed veg or salad. or whatever u like. this made a big portion. it will probably last me for the next 3 days as i am the only one who is eating it. or 4 servings.

came out really nice, tasty and spicy. this is gonna be a staple for me. and a really healthy dish!

breakfast pancakes i made to day for the first time! only 2 ingredients! well 3 if u add a bit of protein powder (optional) ingredients: 1 banana, 2 eggs. mash banana up in bowl, add eggs (i left the yolks in) but you can leave them out if u want, add maybe half a spoon protein powder (again optional) mix in bowl. then cook in pan with a bit of coconut oil. once cooked, serve onto plate and drizzle with a bit of agave nectar… (you can also add a bit of cinnamon if u like) and bon apetitite! seriously delish and easy… this is definately gonna become a breakfast staple for me! 4 months ago

to roast a batch of chicken for the week… halfway through the week will do another batch, so i have chicken for supper most days… served with a cup of mixed veg usually… add to that any other cooked veg we have or that my mom may have prepared. sometimes add a boiled/poached egg/ sardines or anything i find that i feel like thats good. s&p, hot sauce.

other times i will have food she might make if it is carb free.

i make and prepair healthy choc mint yoghurt every night for the next day… so i can just grab them and go… the next morning.. i make 2 and i have them as my snacks…. these babies are so delicious and healthy… and taste better than any choc mint yoghurt i have ever bought in store… really yum. this is my own homemade concoction

i also make when i have the time… i made it twice last week… sweet potatoe protein pancakes for breakfast… yum… and the first time my protein pancakes ever came out decent… really tasty… drizzled with cinamon and agave syryp

and finally my piece de la resistance… i made chocolate banana and peanut butter popsicles… this is such a treat and so healthy too… and tastes sublime… better than any ice cream… so easy to make too… yum yum…

have also now taken to drinking my breakfast oats as a protein oats berry shake cold… whereas before would stick it in the microwave and have it warm… find this way is quicker and its easier to digest… i have one of these breakfast shakes as my post work out shake with oats… so good.

will post recipes for these dishes up here sometime… right now 2 tired…

evoxuschocolate banana "ice cream" aka milkshake

chocolate banana “ice cream” – there is no ice cream – its actually frozen banana, mixed with some skimmed milk, dash water, i added one teaspoon of options hot choc powder, but recipe said for cocoa powder (decided options had fewer cals), added some protein powder, and agave syryp. add all ingredients in a food processor, and turn it on. becomes like a creamy ice cream consistency. i made just enough for one portion for myself, as this is not something u can stick back in the fridge. cos it wont look or taste right the next day u eat it.

you can do lots of versions of this, like using strawberys or peanut butter or even jsut banana and milk which turns out like vanilla iceream. jsut keep the bananas as the base for the creamy ice cream texture.

edit ok verdict on this one: as i have jsut finished making it and eating it now…. it tastes really yummy… but the consistancy is more like a thick creamy milkshake than ice cream… therefore i think i will call it a milkshake now… :) its a great healthy chocolate and banana milkshake :) yum yum 5 months ago

made weird healthy desert.

i take 2 blocks of mint chocolate. the kind i use is dairy free and sugar free. melt that in the microwave for under 2 mins. then i add bout 2 and a half tablespoons or so of greek yoghurt. mix that up so its brown and chocolatey. i add a bit of sweetner (bout half a teaspoon)to it to give it a slightly sweeter taste. then i have these caramal ricecakes that are only 60 cals each. i break 1 into peices. “moosh” that in the mixture. i add it to give it a bit of texture instead of a boring choclate mint smooth yoghurt.
you could add plain rice cakes or something else that might give it a bit of texture. like say a biscuit broken into peices. tommorow im going to a shop that sells rice cakes that is covered in dark chocolate on one side. so might get those. that would be cool to add to it.

thats one of my easy “go to” deserts i sometimes make. 8 months ago

this is a simple healthy snack meal i make. i made one today. i tend to eat a lot of fruits all day long as snacks to keep hunger at bay. and sometimes that can be boring.

so sometimes what i do with my apples when i am home to make it a bit more interesting is to chop it up into peices. i leave the skin on and then pop it in the microwave for 2 mins. then once it comes out the apple is a bit cooked and warm/hot, with the apple juices running a little bit. i then add a bit of cinnamon to it and agave nectar to add a bit more sweetness to it. and i eat it like that. it makes it feel like a comforting warm desert, like an apple crumble minus the crumble.

some people will add sweetner to the apple, but im not a fan of that. so yeah thats what i do when im at home and want a warm snack. when im not at home i eat my apples normally and that helps me throught the day. 8 months ago

i had this for lunch today at work. very delicious. i did ask for no cheese whats so ever, but silly chef made it with cheese anyway. so i ate it. i also had some fresh spinach leaves on the side.

ingredients are aubergine slices, thick tomato,pomodoro sause,
mozzarella and parmazan cheeses (which i would rather not have), all baked in the oven. fresh spinach leaves on the side.

a delicious stirfry earlier. i will call it surf and turf stirfry :)

it was mixed stirfry veg that u buy in the supermarkets, i added some chopped tommatoes and a yellow pepper to it too.

the i put in some chicken breast thats chopped into peices. i spiced the chicken wiht some chicken spice.
then i added a seafood mix of tigerprawns, mussels and calamari :)
(i love seafood)

anwyay i mixed those together and cooked them together. added some salt and pepper and a little bit of low fat sweet sour chilli sauce to give it a bit more flavour.

it was so yummy. i had a portion of that wiht some mixed veg and a boiled egg and a naked ravioli “ball”.

some people maybe arent keen on chicken and seafood together. but i like it. it was like paella with out the rice. surf and turf.

anyway i have 2 more portions for lunch or supper in the fridge for the next 2 days.

the other thing i made after that was what is supposed to be pumpkin protein bars… but i dont have pumpkin, so it became almond and cinamon protein bars.

its basically

one sachet baby food. i use a pumkin/strawbery/apple/berries one. (sounds distgusting i know)
half a cup of sweeter
cinamon
chopped ginger
salt
tsp baking powder
all spice… (gives it that cinamon, clovey, christmasy taste and smell)
4 egg whites
half a cup almond milk (i used water cos i hate almond milk)
2 cups oat flour. (just porridge oats thats been ground in the food processor)
2 scoops vanilla whey protein
supposed to add vanilla extract, i had none, so added almond extract (which is nicer!)
and i added some chopped almonds once all the ingredients were mixed together properly.

then i put in a oven proof dish over some grease proof paper and put in the oven at 180 degrees for 45 mins. i extended the time by an extra 15 mins, as they werent cooked through properly at first.

then take out once ready and cut into small scares. and enjoy as snack meals through out the day if u want. because i cut them into small squares i usually will have 4 as a snack.

anyway they came out really lovely and yummy. love the taste of cinamon and allspice and almonds! almost like frangipan or marzipan in a way.

so i made these cos i get bored with my greek yoghurt snacks from time to time, so i made these to have instead. but i can see myself taking one or 2 of these and breaking it into peices and mixing it into my healthy chocolate custard that i make. it will make it like a healthy chocolate trifle that way ha ha. i already do it with ricecakes, so can see myself doing it with this lol. i have weird food habits. but its all healthy despite how it sounds! lol. these babies should last between 3-5 days depending on how many times i have them as snack meals. 11 months ago

made another quick and easy healthy desert tonight. im going to call this one healthy chocolate custard :)

basically i melted 2 blocks of green and blacks 85% dark chocolate, then i added 2 tablesppons of 0% fat, no added sugar greek yoghurt to the melted chocolate, added 1 scoop whey protein powder. and mixed till all the yoghurt was brown and chocolatey and the whey powder completely mixed in. but wait, it doesnt end there!... i then went and got one of my caramel flavoured rice cakes, (only 50 callories compared to the 29/30 callories of a normal rice cake) and broke it up into peices and then mixed it into the chocolate custard. i did this to give it a bit of texture, cos i get bored with having lots of smooth yoghurty things. i actually only bought those caramel ricecakes to add them to my sweet yoghurt deserts if i felt like it. or the random snack if i feel like it.

anyway, this thing came out better than i expected it tasted like chocolate custard, like u get in the shops or in rocky road sundaes or what not… those desert things. it was well nice, and i felt like i was eating a chocolate desert that was sinful :) but it wasnt! but it sure did taste good. was jsut thinking u could also add a bit of cocoa to give the custard even more of a chocolately taste or use chocolate protein powder for the same reason. also because i used 85% dark choc… there was a slight dark chocoalte bitterness to it… but it wasnt a deal breaker.. but if i dont like that, one can always add a bit of sweetner to make it sweeter.

i havent made this yet, but i am planning on making it. loooks sooo good and yummy. just gonna work on the amount of riccotta to use, and i wouldnt make the sage butter sauce, id find a alternative sauce, or just have no sauce. ricotta cheese is quite a healthy lighter cheese, but i still wouldnt want too much. and i wont be adding the parmesan cheese as i dont see the need for more cheese and dont feel it will make much difference if i leave it out. these looks really good, and would be a easy thing to make in advance, and then u could have say 2 with lunch each day.

i must check out his other recipes. he is quite the cheeky italian chappy and entertaining

edit i made these today! now when i made it, i found that because the spinach shrinks considerably once cooked, and my mixture was very sticky, i needed to add something to make it more solid. so i put 2 cups of oats (normal porridge oats) in the food processor and blitsed it, made oatflour and then added that to the mixture, and that worked a treat. i always try to use home made oat flour instead of breadcrumbs or white normal flour in various recipes if i can. it is much healthier. anyway,i made 12, and had 2 for supper wiht some haddock fishcakes and mixed veg. was yum!

i also made my healhy homemade strawbery, fatfree protein rich ice cream earlier! and once all ingredients were blended i cut some fresh strawbery chunks and mixed that in and then popped that in the freezer. its still chilling and freezing at the mo, but i will prob have that as my late night, last meal, desert. pure decadence. cant wait.

also had a banana and peanut butter wrap for lunch today :) 11 months ago

todays breakfast was berry oatmeal

i add oatmeal, water, (instead of milk, ur choice), i usually add some sweetner, mixed frozen berries, cinamon, depending on my mood and flax seed too. this is a breakfast of choice some days. it jsut dawned on me today that i could add whey/protein powder to it too. so will prob do that next time.

the other side breakfast i usually make together with this one, or on its own is rice cakes alla french toast lol

basically its ricecakes, lightly fried in egg whites, till golden and crispy. do not use whole eggs… as it makes it taste eggy and distgusting. anyway… once done… i sprinke agave nectar on them. and they are so delish… its like having something decadent and sweet for breaky… and oh so good for u :)

other breakfasts i usually have is scrambled eggs on one peice of brown toast, full english minus the beans, sometimes minus the toast, other wise just 1 peice, and all ingredients are usually grilled in the often. makes for a actually healthy breakfast.

i also sometimes make a omelette with low fat cheese and ham, and sometimes add veg like mushrooms or spinach. again served with one slice brown/granary toast.

those are my usual breakfast staples all dependant on mood. i seldom deviate from any of them.

todays lunch was something different that i hadnt tried before: but it was quick and easy and yummy

lets call it peanut butter and banana wraps… so original… i know.

basically it was a wholeweat wrap (tortilla wrap? somehting like that) its 120 callories. and i spread it with peanut butter and then i took one banana and cut it in half and put it in the middle and then rolled em up. i had 2 ;) it was sooo delish. its sort of tastes like a banoffie pie wrap with out the toffee… so good. you could add a drizzle of honey or agave nectare if u want. but i found this was sweet enough for me as it was. peanut butter is my friend :) i love it but have to be good with it.

some other things one can try is rice cakes covered one side in dark chocolate. ive never made these buy i sometimes buy them as a snack. the pack comes with 3 rice cakes and they are 80 cals each. id like to try and make them sometime.

the other thing i want to try and make soon is strawberry popsicles.

basically made with 2 cups plain yoghurt, some strawberries/berries, 2 scoops strawberry protein powder or whey powder, and a bit of agave nectar too taste. blend all in the blender. pop into popsicle moulds with a stick and pop in the freezer. i have never made this as popsicles, but i have made a similar kind of icecream like this and jsut put it int he freezer in a tub. it was the most creameast amazingist strawbery flavoured ice cream ever. and again good for u. cos the yoghurt i use has 0% fat and no added sugar. much better alternative to icecream or sorbet. i might make this soon instead of my daily yoghurt fixes. 11 months ago
