started making my posole with a chipotle chile as an alternative to the NM ‘Big JiM’ red. it’s the bomb! put a batch together yesterday and today it was ready and roaring good. remember, never a bowl on the first day. that pot has to sit in the fridge overnight. don’t forget the lime either. winter’s coming.

I’m on vacation in Florida right now and I have had some chipotle in various forms… first it was in a raspberry-chipotle sauce that went over grilled chicken and just 5 minutes ago I tried Target’s “Choxie” brand of chocolate – a ‘hot chocolate bar’ that is truffled dark chocolate with chipotle powder in it. My endorphins are loving it and I am too. Mmmmmmmmmmmmm….
