My Mom-in-law called me the other day and asked what kind of cornbread mix I use.

“Jiffy!” I said, “It’s the ONLY kind!”

Yeah, my mom swore by jiffy brand, and it’s the only stuff I use at home. Little did I know, the first ingredient listed on the box is wheat! I guess I just never checked it, because I assumed it was just corn meal. :(

I can’t remember when the last time I had it was. I must have either not gotten very sick, or blamed sickness on something else I ate.

Anyway… Booooooo! Boooooooo Jiffy Corn Muffin Mix: You suck!!!!!!

PS OMG I am such a dork… the last couple of times I ate this corn bread, I had it with my favorite canned Chili (Campbell’s Chunky Grilled Steak Chili with Beans), and I got extraordinarily ill! I stopped eating that chili, even though I could not find anything in the ingredients that should have made me sick. Oh, I am so smart sometimes. At least I can go back to eating my favorite none-homemade chili. lol

They still have that dumb thing of “We don’t calculate shipping costs for you – you have to call or email us” which I think is stupid, but at least they no longer have that message up that says half of their prices are incorrect, and we’ll just have to keep guessing until they fix it…

Finally, I can purchase the best GF bread ever again!

Off the subject, kind of

In other GF news, I talked to my sister the other day, and she was recommending a stomach medicine:

Sister: ”...Since I know you have stomach issues, like me…”

Me: “Actually, I don’t anymore. That was all caused by the gluten.”

Sister: “Really? Wow! I didn’t know you stopped having stomach problems!”

Me: “Um, yeah! That’s why I keep telling you you should do the same thing. I am so suspicious that you are also gluten intolerant!”

She won’t do it – it’s just not worth it to her to give up food she likes. It sure was to me!

where the only gluten I had was hidden in those Nairn oat crackers (ate about 8-12 of them this week), plus I was having a rare bout of PMS and had two mini-sized Twix.

Hey, I ate those Twix as a public service to prevent me from decapitating someone with my bare hands.

for gluten free, sugar free cookies. Haven’t tried any yet, but they sounded good for people with dietary restrictions who want the occasional treat. Brownies made with flax meal instead of flour is an interesting concept, thought I.

I have been researching erythritol as a sugar substitute (watching my blood glucose, as is My Man), and from everything I’ve read it appears there have been a lot of studies done and it is generally regarded as safe (GRAS).

I have a new goal which I have’t quite worded for 43T yet, and that is to spend some extra time clipping coupons, and learning how to best save money with them, while still getting what I want on my grocery list.

I figure the best way to do that is by virtual coupon clipping. I might add, It’s going very well! I went searching for some gluten free resources, and found the above site. Thought I should share! Who doesn’t need to save some money on all that expensive gluten free food?

Noticed yesterday that Nairn’s oat crackers do contain gluten, at least that is what the small print allergy info on the red box says. The yellow box does not list gluten as an allergen, so…

Anyway, the only gluten I’ve had this week (that I know of, besides hidden gluten that I’m unaware of) were about 4 of those oat crackers. Otherwise, gluten free. My man is also trying to avoid it, though he did have a small slice of pizza the other night…

My mom-in-law and sister-in-law made a speghetti dinner for the family, and for me they made gluten free linguini with gluten free meatballs (I haven’t had meatballs in years).

The linguini was Hodgson Mills brown rice and flax seed linguini. I share this because I think the brown rice and flax seed is better than white rice, or just plain brown rice, and at least as good as corn and quinua.

The meatballs, I discovered, were not made with any kind of flour at all. They were just balls of ground beef with garlic and GF spices. They were really tasty. I would like to make some at home.

Which reminds me, another thing I need beef for is to make myself some sloppy Joes. It turns out a lot ot brands of sloppy joe are not gluten free, but Manwich is.

My sister messaged me online to let me know that she went to this place, and they had a whole gluten free section on their menu. Also, they have a GF dessert called the Chocolate Dome. Sounds good to me!

GF Sheet Cake? 1 month ago

I am planning a party way far in advance. I have long had a phobia of driving (I’ve had my permit for ten years…), and finally gave in and got professional help to guide me in coping with my phobia. When I finally get my license, I want to throw the biggest, bestest party I’ve ever thrown. And I want a cake.

What I really wish is that I could just buy a cake from a bakery, because they always look so awesome – and you can get them with photos on them. I could have a photo of my license, and have a driver’s license cake! But we don’t have a GF bakery near us that I know of.

My husband suggested using Betty Crocker GF brownie mix, because my sister made them into cupcakes earlier this year, and didn’t tell anyone they were GF, and they got eaten right up. I still have my heart set on this bakery cake… I wonder if I gave some GF mix to the local grocery store bakery, if they would make a GF cake for me… and then I wonder how much mix I would need, and whether or not cross contamination would make me sick.

I’m going to do research to see about a GF bakery in my area, but it’s likely I’ll just suck it up and bake my own cake.

I think I may have gotten slightly glutened last night, because I was dizzy and puny for a good portion of the night. Have to be more careful.
