    i used to suck at cooking growing up. my brothers were ruthless and poked fun at me. i think i even screwed up a box mix once. terrible. it has taken years to gain my confidence in my cooking and i would love to know how to cook like the pros. plus i want to learn how to chop really fast!!—without losing a finger, of course

    I like cooking .. mostly gumbos and cajun/southern style, stir fries, and some grilling. But I realize that in the grand scheme of things, I don’t really know jack. Maybe it’s just too much Food Network, but I’d really like to take formal classes and learn as much as I can – ingredient selection, styles, cooking techniques, “theory”, adjustments, etc. Haven’t made any serious efforts to accomplish this yet, but it’s now on the list ..

    I love to cook. Instruction would make me more confident. I would take advantage of the education, unlike my friend who went to Cordon Bleu and then became a medical billing specialist. Give me a break!

    so, kurma was a total wanker but the food was good. and the chutney! hooray! oh to be able to just hand shit around when it needs washing up rather than having to do it yourself

    There are 2 types of cooking classes – ones that are for interest and others for people who want to become professionals. It doesn’t have to be a big commitment.

    I feel like the chef is withholding some information from me. He’s teaching me the basics but not telling me the trade secrets. I know he’s allowed to just stick to the course manual and not give a lot of extra pointers, but little things like when you know something is in the right state is important. I guess I know from experience now to jot down little notes about timing and the order things are done. This is necessary if I want to replicate the dish. Ie. How brown you cook something like a drumstick on a pan affects the end result even if the chicken is later cooked with liquid in the oven.

    Tonight I took a paella cooking class. Tomorrow the world…....
