There are so many things that go hand in hand with canning… It’s hot and long and makes stickiness everywhere that you still find weeks later… (How do tomato seeds always end up behind the wall plate of the light switch, anyway?) Sometimes it’s noisy. Last year I did fifty pounds of peaches and had nightmares for a week of my brother and his (at the time brand-new) wife being eaten by a rhino (thank you, Mr. Dahl)... But there is something to be said at the end of the fall when you can look up at all the shelves of pretty produce sitting and waiting for you to eat it-all different colors and shapes-and think, I did that.

I bought an assortment of jars and lids and rings and seals and stuff at the auction this Saturday. On Sunday, Hubby and I found a local store that carries the gasket that needs to be replaced on the second-hand pressure cooker I got at a yard sale last year.
Baby steps.

I’m determined to have my garden be a bountiful producer this year. I plan to sell produce (along with eggs and bunnies), donate to a food bank, and I very badly want to “put food by”.
Canning / jarring, freezing, drying, I want to learn… and then I want to do it.
