I tried a recipe this afternoon. It’s good. But it’s more like potato chowder with corn in it rather than corn chowder. However, it is still delicious and was much easier to make than I anticipated. I am going to mark this as done because I have not bought corn chowder and I am going to eat this. However, I think I am going to tinker a bit with the recipe…instead of a cup and a half of milk, I think maybe I should use less milk and add a can of creamed corn instead, to thicken it up. I figured out some of the cost as well. Even with organic milk, I figured I spent 50 cents on frozen corn, 75 cents on milk, and about 50 cent on potato. The other ingredients (a little bacon I had frozen, two carrots, and spice) probably didn’t add more than 50 cents, and I added some cheese, another 35 to 50 cents. That’s less than $3 for a whole batch of soup…I can easily pay that much for just one can (which would feed me twice). I think this will feed me at least 4 to 5 times, plus I know what’s in it. Totally worth it, in my eyes.
