As we have been visiting the dietian and learning about being healthy, I am really enjoying eating healthy food. I plan for 2008 to continue cooking healthy meals EVERY DAY!

The trick is doing it slowly. Lots of kid-friendly meals. Things like using wheat flour instead of white, using honey instead of sugar, and tons of fresh, whole food wasn’t really that hard. We’re loving whole grains like quinoa and bulgar, snacks like peanut butter balls and bananas with wheat germ, black bean hummus, etc. Bean burgers (instead of beef), homemade healthy pizza (instead of fast-food greasy things), and even sweet baked goods without tons of fat is great. The hubby will still need converting, though… :)
