I recently read Michael Pollen’s book “In Defense of Food.” It was both informative and inspiring regarding this goal. I found a local farmer’s market that does CSA boxes and got one last month. The quality, taste, and price were all better than can usually be found for organic food in the grocery stores here. However, it was too much fresh food for my husband and I to eat at once, so I chopped up a bunch of the veggies and froze them. Now I’ll just be able to get off of work and drop them into whatever I’m cooking with less prep time.

I definitely eat more fresh fruit these days, and usually when I go out for lunch with a fried i get a bi salad, but on the whole I am not doing a great job of eating three to five servings of veggies a day. I still tend towards the meat and potatoes routine. But I am finding that cooking interesting/ethnic vegetable dishes is a good way for me to eat more veggies. I also have been eating more fresh raw veggies as crudites – sugar snap peas, carrots, celery sticks with hummus, baba ghanouj or some such.

I went to the farmer’s market yesterday. My fridge is now loaded with veggies, my fruit basket is loaded with fruit. Last night a invented a recipe for eggplant stuffed with quinoa, shrimp, and portobella mushrooms. Tonight I’m making chicken soup with lots of veggies in it. Eating healthy definitely doesn’t have to taste boring…

I’m starting a healthier eating plan. One of the things i want to include is eating at least one fruit or vegetable with breakfast (grapefruit, bananas, tomatoes, etc.) one or two vegetables with lunch (salad, lettuce and tomatoes, etc.), two vegetables with dinner (steamed squash, dinner salad, baked potato, etc.), and a fruit with any dessert (strawberries, blueberries, etc.). I think it would be a good lifestyle habit to get into, especially when cooking at home.
