Started with concealed carry: egg rolls, potstickers, etc. and moved on from there.
Onions, cabbage, beans, zucchini, and all sorts of veggies are in my diet now!
How I did it: I moved to one of those countries that makes picky eaters adapt or starve to death. Japan has definitely changed my attitude on the foods I eat. Taking trips to China, Thailand, now living in other parts of the world, you have to change you attitude on what you eat or you won't have a good time, because all you'll be thinking about is Macaroni & Cheese and Pancakes. Not that these aren't still very dear to me, but I have to admit that Sushi is now one of my favorite foods, I can't get enough of burritos (I used to hate burritos! what was i thinking!?) and snails are amazing!
Lessons & tips: You just need to get over the problem with texture. That was my main hurdle. Like sea urchin, still hard to swallow for me, but I will eat it again.
