After a week of hunting around for poblano peppers, I finally get to try a recipe I saw on “30 Minute Meals” a few weeks ago on the Food Network: Charred Chili Rellenos! This was the recipe that inspired this particular goal, so I’m excited: http://www.foodnetwork.com/recipes/rachael-ray/charred-chili-relleno-with-green-rice-recipe/index.html
(The stuffed peppers – with Caribbean rice instead of the rice noted in the recipe because I want to pair the peppers with something just slightly sweet – are being prepared for a dinner to be shared with Sweet Guy tomorrow; a review of the results will follow.)

Grilled pork chops with ginger-rosemary marinade and broccoli slaw.
The pork chops turned out okay; I’ve decided that replacing the hard cider with apple sauce will result in a thicker sauce that will carmelize on the pork chops better during the grilling process.
(This week I also invented a quesadilla with the ingredients being sauteed spinach with red onion and garlic, alder-smoked salmon and spreadable herbed cheese. This rocked!)

i think i’ve only missed two weeks so far. what’s unfortunate is that there haven’t been very many repeats. someday what i should do is put all of my recipes on notecards & put the notecards in a box, & then i can flip through & organize my food for the work week.
that might be a little anal retentive, even for me.
