i want to learn to cook quick easy and delicious vegetarian meals im tryin to stop eating animals but i dont know how to cook a meal which doesnt include meat. my goal is to learn before the yr begans so i can start the year off meat free :-)

I made falafel (Far East) pita’s with a side of tabouli. Hummus is a staple in our household, but didn’t make it to the table for this meal, though it could have fit in well. The Tabouli was also from a box, but I added lots of veggies, like cucumber, fresh parsley, chopped spinach, cherry tomatoes, yellow bell pepper and a small amount of feta. I also whipped up a yogurt condiment with garlic, chopped cucumber, dill and black pepper to top the falafel. I’m not into boxed meals, but we attempted making falafel from scratch several months ago and it was a big ordeal that turned out funky. However, I bought some bulgur wheat and from now on, will make my own Tabouli. Awesome meal, but had great pains convincing my son to eat it.

Last night: Butternut Squash and Pear Soup (recipe from The New Vegetarian Epicure) served with black bean and quinoa quesadillas. Everything was delicious!

I did two more over the weekend – a grilled onion and mushroom sandwich (yum!) with a sweet potato side and a black bean/avocado/tomato mixture in a pita (yuck!).

I cooked a vegetarian dinner yesterday. The main entree was good, the roasted vegetable side dish sucked.
