    Using my freezer 3 years ago

    I am on a new kick to save money on my food bills. I was eating out all the time, almost every day for lunch. It got very expensive and I decided I was throwing my $ away. I started cooking A LOT more a few weeks ago. I will make a big batch of something in the crock pot or just on the stove, eat it for dinner, and then put the rest in little plastic one-serving bowlies. Then I label it with masking tape with the meal and the date, and pop it in the freezer. Every day (except one) I’ve been bringing lunch to work. It’s easy, cheap, and I end up getting a lot more work done than I was before. Also I am getting to try different things. I made so far- lasagna, stew, macaroni and cheese, chicken and rice with veggies, some kind of funky beef rib thing with rice and veggies, a few different kinds of soups. I haven’t been spending much for groceries either. So it’s working well so far. Also I get a lot of variety- my freezer is PACKED right now with ready-to-eat meals. I even have them for dinner. So it’s working well so far.



    Cooking amazement 3 years ago

    Tonight I put together a dish of salmon, scallops, and orzo with broccoli, and it’s yummy. I poured myself a nice glass of Reisling. Sometimes I amaze myself with my cooking finesse!

    But it is a real pain to cook during the week when I get home from work and I’m exhausted, and it’s just me to cook for. If I had someone special here to cook for then I wouldn’t mind it so much.
