    I need to find a way to do this in a microwave, or at least fake it. I may not be able to make injera (flatbread), but I might be able to approximate a wat (stew) if I marinated it with berbere (spice mixture) for, say, a day in the fridge. You think?

    I tried making a flatbread, but the pan was probably too small. It was edible, though. (This from someone who’s eaten cat treats.)

    I have money to get injera-making ingredients today before work! I’m going to perfect this recipe this weekend.

    I found a very simple recipe for injera (flatbread) online. It doesn’t use teff flour, but … it’s simple and will get me started. I’ll have to cook at work for now because all I have at home is a microwave; I can cook a few and take them home, though. And one of the clients who’s addicted to pancakes will naturally assume they’re for him. XD One bite will scare him off, however.

    I love Ethiopian food and there aren’t any Ethiopian restaurants around here. I could make some big pancakes and put spicy stew on them, but it wouldn’t be the same. I want the real thing.
