As a former athlete, I am just ready to get back into shape.
How I did it: Eating salads was good at first, but I used a lot of dressing and all those greens didn't leave my tummy feeling good. I started to focus on rice and beans with veggies, and stir-fry with tofu, and that was great. Also cereal with soymilk. Those were my staples at the cafeteria, and I pretty much gave up dairy and seafood (was already meatless for a long time). Since living on my own and cooking for myself, there is still a lot of rice and bean dishes, plus I've gone back to fresh salads and fruits. Lately I've had a lot of PBJ sandwiches, is that healthy? I am also eating cheese again, I can't seem to find a good substitute for mac'n cheese. However, pizza with fried veggies and sauce, no cheese is just dandy and lighter than cheese pizza. Overall, cutting back on dairy and cutting out junk food is great and I hope to maintain that.

I am doing really well on this goal.
I pack my lunch now.
I eat oatmeal for breakfast every morning other
that the ones I am just sick of it. Then
I eat a veggie omelet.
I started this goal because I started having
low blood sugar episodes – one in which I actually
passed out and my doctor told me I was prone
to hypoglycemia – very hard to diagnose I guess.
But he suggested controlling it through diet before
going any further. The key is to avoid blood sugar
spikes which then cause blood sugar to dip rapidly.
I am proud to say, I have not had a shaky or
fainting episode in a long time. It really is
a miracle – I feel great – and I have energy.

Yesterday I finally got some food stamps, and will now eat more once a day after quite some time. the whole process was kinda of easy and I was able to get some veggies and fruits that I normally can’t afford ,it was a good day.

today is my day 7, and i haven’t had any problems …yet. I’m also writing an article on what it’s like to be vegan, so i have to stick it out for at least 31 days. I told one of my friends about how I was considering doing this, and she talked to her editor, and I get published in august! Doing this makes it so easy to eat right, because junk food, and all the crap I was eating before, is made with animal products. I don’t know why I didn’t think of this earlier!

I’m doing an article for a friend’s magazine about what it’s like to be a vegan. Basically I go vegan for 30 days [or more] and document my experiences. I’m only 3 days into it, but i think it’ll be fun!

I’ve been eating almost totally vegan lately, and its actually making me feel better. I’m not as tired and bitchy as I usually am. Plus, my new foods taste better than the old ones! something to consider. idk. it’ll make eating out hard, but we’ll see. I have no moral implications against eating a burger [sorry cows] They taste okay and all, but I rarely eat meat anyway. the milk and eggs and such will be a little harder to tackle, esp cheese, i do love cheese! idk. I’ll think about it.

I never, or rarely ever, eat right. I don’t have a lot of time, or motivation to do so. I’ve gotten all the cookbooks and meal ideas, but they all require so much time. It’s so much faster to just grab a bag of whatever prepackaged food is sitting on the counter. I tried just buying healthy foods, but that just meant I was throwing rotted food away because I wouldn’t eat it. I think if I had a bigger apartment my time at home wouldn’t be as stressed because I would have more space for all my crap, so it would be cleaner. my how my goals overlap.
I have been pretty much eating right since October 2007. I am on my way to that health and fitness goal.
