cook, cook and cook some more

I am having to put this on the back burner for now as the only cooking I do now is boil rice and I am afraid that is all I shall have the energy or motivation to do for the next few months. I was proud of myself for actually cooking for Christmas but that was a struggle in itself, even though it reminded me of how good a cook I am becoming.

Doing Atkins has turned me on to this even more. And even though I have started eating carbs again (tbh maybe a bit to much), not only is the WOE saving me lots of money when i do the food shopping as I am no longer a freezer ailse fanatic but it also means that Madam gets to see me slaving over a hot stove so to speak lol Which is not a bad thing I might add.

I want her to have an interest in cooking and even though I maintain that my Mother never encouraged us helping out in the kitchen or learning to cook alongside her (No, we weren’t spoilt!), I want Madam to feel familiar and comfortable in a kitchen as she gets older and not get to 17 only to realise that apart from boiling rice and frying plantain there isn’t nowt else she can do.

Better dash as I have just realised the chicken was meant to be out of the oven already :oops:

mmm, can’t wait till dinner :)

Cooked a roast for dinner and decided on aubergines and cauliflower (Wanted caulifower cheese but I couldn’t find a cheese sauce recipe that could be made without milk. bleugh )

Decided that maybe I am not a fan of aubergine but might give it another go, as long as someone else cooks it hee hee

Need to pick up some eggs at some point tomorrow as I am not paying for a cheeze omelette at the cafe again as i did this morning.

Decided last night that I wanted to cook some Oxtail & Beans

So, popped the frozen meat out of the feezer and noted what I needed to make up the recipe I had decided upon. Even though I have never cooked this particular dish I wasn’t pertubed in the least. I went through a phase about 4years ago where I found myself morphing into Delia and besides I can follow a recipe along with the best of them :p

The pressure cooker has been bubbling for the past 2hrs and I expect we shall be eating by 5pm.

Shall fry some Plantain and cook up some white rice to serve alongside.
