You can’t really make a mistake with this. Home made wine is FABULOUS especially if you do it with real fruit. I’ve never had a batch go wrong and I’m an rank amateur. If it tastes weird, just rack it again and keep it for longer. Forget about it. I’ve got some gorgeous dry sherry-style wine made from blackcurrant concentrate some three years old now. Delicious. But. Will be ready by Xmas.
