    This is what it looked like, and I must say it tasted greattttt. I changed a lil bit because I had no onions so used sweet and green peppers isntead ;-)

    Im gonna try: Fish with white wine, onion, lemon and orange juice!
    Lets see if i dont end up eating pasta! hahah

    spinach and ricotta pancakes 1 year ago

    finely chop two cloves of garlic and fry in a little olive oil for a minute or so. add a packet of washed spinach and wilt. add salt, pepper and a little nutmeg. stir in half a pot of ricotta. serve in pancakes.

    Quinoa and black bean salad 1 year ago

    I made this today for my wife’s lunch. It was fairly good, but not exactly to my liking. It’s a bit too sour for my tastes, but my wife liked it a lot. You can find the recipe on the foodnetwork.com website at:

    spinach and sweet potato curry 1 year ago
    • fry onion, garlic and fresh root ginger.
    • add spices: garam masala, corriander, turmeric, cumin, chilli, cinamon, cloves (in decreasing amounts ie. lots of garam masala and few cloves). salt and pepper. fry a bit more
    • sweet potatoes, chopped small
    • add a tin (can) of chopped tomatoes
    • add a little vegetable stock
    • a handful of sultanas (golden rasins)
    • find cloves and take them out
    • when potatoes are cooked, add spinach and cook just enough to wilt

    serve with rice



    minestrone soup 1 year ago
    • fry onion, garlic and celery in a little olive oil
    • add carrots
    • add vegetable stock, salt and pepper, small pasta shapes, tomatoes, and a few drops of tobasco – cook for 10 minutes or so
    • add a tin of mixed beans and some frozen peas (or broad beans) and lots of chopped fresh parsley

    a very good quick, healthy meal, and tasty too! the parsley makes it, so don’t skimp :)

    parsnips, boiled and mashed up a bit
    fried leeks and garlic
    a tin of kidney beans
    tomato puree (paste)
    tamari (soy sauce)
    oats

    mix it all up and bake. nice. it was sweet because of the parsnips. i forgot to cover the leftovers and put them in the fridge so the next day it was a bit dry – i made some spicy tomato sauce to go with it which made it a bit moister and more tasty. also had some broccoli with it.

    noodles with chinese leaves and spring onions (scallions) with a sauce of tahini (sesame seed paste), tamari, ginger, lemon juice. topped with sesame seeds.

    soooooo good! i’ll definately be making this again. it took only ten minutes too.



    Quinoa Chowder 1 year ago

    Friday I did most of the cooking for a Quinoa Chowder we’d never tried before. My wife did a lot of the prep work because she was very hungry and wanted to speed things along. The chowder ended up tasting quite good and we had plenty for dinner Friday and then again for a late lunch on Saturday.
