Banana muffins. So delicious and simple. I’ve also been known to make muffins out of malt-o-meal.
How to bake muffins
How I did it: Followed a recipe
1.25 cups flour
1 cup oats
1/2 cup sugar
2.5 tsp baking powder
1 egg
1 cup milk
1/2 cup butter
1/2 tsp salt
1 tsp vanilla
1 cup cut up strawberries
425 F for 20 minutes.

Challenge for tomorrow, find a GOOD recipe to try, or buy the things I need to make chocolate muffins, of which I know the recipe by heart.
mmmm. I can’t stand to throw away food, so I always put any speckly brown bananas in the freezer. Then I can make banana bread (or muffins) when I have the time.
My roommate moved out and left a bunch of pecans in the freezer, so I tossed in a cup of those too!
Muffins are better than bread because they’re more portable (nice to take to work) and easy….no need to dirty a knife or cutting board or plate, just grab & eat. Yay.

Then I have to decide what sort, I’m hoping to make savoury ones but I have a super easy chocolate recipe too :s

I have this on my list is that right now I CANNOT bake muffins because I do not have a muffin tray!!
But yesterday I found these amazing ceramic RED muffin trays, which are a bit more expensive than the usual non-stick or silicone (creepy) ones but that I really would prefer to have.
So once payday rolls around, I will take a look at my budget & hopefully get myself a tray & get baking!!
I bake muffins every Sunday. They are very easy to make, they r delicious, I make them from scratch, so I know there is not any single artificial ingredient. They fill my house with warm aroma and always attract visitors for a cup of coffee.

Muffins aren’t hard to make. The only special equipment they require are muffin tins.
Muffins are easy to personalize. With a basic muffin recipe, you can do many different variations, such as: put in dried, fresh or defrosted frozen fruits; jam instead of sugar (works great!); spices like cinnamon or nutmeg; canned pumpkin or a baby-food jar of squash or carrot, or other sweet-ish pureed veggies; nuts or seeds. They also can survive various liquid substitutions, like juice or soy milk for milk pretty easily.
Just don’t mix the batter too hard—thoroughly blend the dry ingredients, and then barely fold in the wet. This will prevent tough muffins, which are no fun.
