Omaha is filled with decent little restaurants- all of which seem to serve much the same things.The middle rung is filled with meat:
We have steak houses. We have Italian steak houses. We have Japanese steak houses. We have Greek steak houses. The common themes- regardless of whatever else they serve- is that the restaurant be barnlike in size, and that diners be able to order a huge steak, salad and a side of fried potatoes.
At the top rung we have cunning little theme restaurants that try to bring midwestern chic to the plains. Bistros, boites, hang outs… All of which serve the sort of warmed over nouvelle cuisine that’s been abandoned by the rest of the civilised world.
Ghastly.
At any rate, I’m a very good cook- used to make my living at it. For the past couple of years, I have catered the annual 12th Night Ball at our local Unitarian Church. 100 rich people in tuxes demanding to be stunned.
I think, on the basis of all of this, that I could probably make a goodly amount of money simply providing decent food for the masses.
