a way to eat more fruits & vegetables, but I definitely have mixed feelings about it…. I’ve been picking up (for example) packages of pre-cut carrot & celery sticks or pre-sliced watermelon & cantaloupe chunks at the grocery. On the one hand, I’m eating more of the healthy stuff than I might otherwise; on the other hand, it’s costing more. wry grin
Sometimes I’m lucky enough to find a tray of prepped veggies or a bowl of cut fruit that’s on sale because it’s approaching its due date. On those occasions, I think I am most likely breaking even on the cost.
I’m justifying the added expense, from those times when I don’t find prepared items on sale, by reminding myself that sometimes whole fruits & veggies go to waste because I didn’t have (make) the time to prepare them, while cut fruits & veggies (almost) always get eaten. So maybe I am breaking even on the cost there, too?

Despite fresh things being less available & more expensive in the winter months, I think I’m doing well enough to put this on the “backburner” of completed goals. Of course, I can easily come back to it if I want/need to in the future. In the meantime, having made this a priority has definitely helped me to eat more fruits & veggies — & that is “worth doing!”
I’m also continuing to work on my subgoals of trying ten (each) new fruits & vegetables. smile

Over the past couple of years, I have been trying to eat more fruits and veggies. There are very few of these foods that I do not like. Ironically, one vegetable that I am not that fond of, was served this Christmas Day dinner at my in-laws, lol. Brussel sprouts, ugh. I took a helping of four or five of them and managed to eat all of them. I used to dislike spinach and asparagus, but I enjoy both of those veggies now. I really like mushrooms and they are so good for us, but unfortunately, both my sons don’t like them.

Having completed a month of entries on this goal – & seeing that my re-focusing has really helped! – I’m going to set this one aside (the recording, not the eating of good & good-for-me food) for a while, & focus now on drinking more water. smile
