I just finished week two and I am loving it and hating it at the same time. I am learning SO much but I just cannot get my knife cuts down. I have never had anyone watching me cut and judging so I get really nervous when my chef instructor is standing behind me telling me I am not doing it right. It is horrible my nerves get the best of me and I start shaking. Luckily my instructor is not mean about it he thinks that it is funny because I have nothing to be worried about and I can talk to him just fine but when I am using my knife is when I get nervous… Maybe its the knife Im afraid of????? Hope not !!

My first day was today!!! It was so awesome, I had so much fun. There were so many interesting people to meet and so many friendly faces to get to know. The class is going to be great we all seem to be getting along really well and having a lot of fun…. but what can I say it was only the first day!!!!!!!!

Well… the first step in finishing culinary school is to start right??!? Well I start on Monday and I am absolutely TERRIFIED!!! I keep thinking what if I make a fool of myself, what if I am no good at this, what if, what if, what if??? But I will never know until I try it. But I think that things will work out alright.

I am currently enrolled to begin classes at L’Ecole culinare!!! I am so excited. It is going to take me close to 2 years and I will have my associates degree. I cannot wait to get started!! I am so nervous though I hope that I do not choke and chicken out…....
Ok, so after much pondering, many mind changes, alot of wasted money on classes that I didnt need and several panic attacks, I’ve finally found something that I really love and really feel like I’m going to stick with. Yep, I’m trying to attend Le Cordon Bleu culinary academy. Now all I have to do is figure out how to pay for it….
