    Oh what Irony that I never got this done BEFORE I found out I was allerrgic to wheat.

    Now I want to learn to bake edible non-wheaten bread.

    I recently finished culinary school earning an associates in Culinary Arts and an associates in Baking and Pastry Arts. I want to specialize in artisan bread baking and techniques. I’m still learning, and probably will be for years to come, but I love bread and bake every chance I get. I recommend picking up How Baking Works by Paula Figoni. This book has a lot of the science behind baking and pastry arts including flour (which is more complicated than one might think,) fermentation, and how heat application affects starches, proteins, fats, etc.

    I met my wife in a bread baking class. Since then I have been experimenting with baking bread. What I have learned is that one does not learn how to bake bread overnight. It takes years of practice. A good sense of yeast and a warm kitchen don’t hurt either. I want to learn to bake good bread because good bread doesn’t hurt anyone.
