I got my good onigiri moulds in the mail, and with some practice, learned how to make the rice sticky and keep its shape :) So, I’m taking seaweed onigiri for lunch tomorrow, yay! <3

I finally got hold of a triangular onigiri mould! And my snack onigiri didn’t fall apart at all while it was being transported or eaten! :D
I’m one step closer to having my dream Shinzi Katoh onigiri box and being able to actually use it. sigh :)
I can’t seem to find a good set of instructions for this anywhere :/ Cooking the rice was a little hit-and-miss, because every guide I’ve read just says to use a rice cooker :| It turned out well, though (maybe a little less water next time) :D
I made three – one I shaped by hand (not very well, either – it fell apart in the fridge, that’s why it’s not in the picture XD), another with plain rice and filling in a heart-shaped mould (took a little longer to fall apart, but it still did eventually XP), and the third with vinegared rice and filling in the same mould (it’s still well-shaped after a few hours chilling, but the real test is whether it can withstand my journey to work tomorrow morning!).
I’m going to carry on pracicing – they look OK, but I think I can do better.

First attempt – SUCCESS!
The rice turned out really well. I think microwaving it is the best way to go for me – I always mess it up on the stove.
But I need to work on the fillings I make for it. And everything needs more salt!

I should have known better than to underestimate those Koreans. They not only had about 7 different kinds of nori for wrapping sushi/onigiri, but as an added bonus, there were little plastic onigiri triangle molds right beside the seaweed. Aren’t they smart?
How much more convenient could it be?!
Next step: Hoping my microwave-rice-cooking-adventure is successful…

I have the right kind of rice, but I need to find out which type of seaweed to buy. There’s a Korean store down the road which has lots of seaweed, but I can’t read Korean at all. And I don’t think it would be useful to ask a Korean clerk about ingredients for Japanese food, cause how should they know? (I mean, even if they essentially have the same thing, it’s not going to be called “onigiri” in Korean!)
Maybe I’ll have to stop by the Japanese store downtown after work tomorrow.
my uncle said he would send me some seaweed. (he lives in manchester and theres a big cash and carry there.) But he send the wrong stuff :(
i guess ill have to go myself.
Went to Tesco today to get the ingredients but they dont sell them! So i went to other shops but they dont sell them either. So now im stuck on what to do. ill look around to see if any shops sell them or i might just go to a takeaway and ask where they get it from.
