    I have cooked once this week 20 months ago

    I cooked dinner Monday. Yesterday, I didn’t have all the kids, so Chelsea and I ate out. Tonight is dinner at the church. So that leaves me cooking Thursday, Friday, and Saturday. Deep sigh. I can do this. My check book and my waist line and my kids need this.



    Not so hot this week 2 years ago

    Well, we ate out both nights this weekend. Otherwise:

    Monday—chicken sausages, brussels sprouts and baked butternut squash
    Tuesday—I had my night class, so I ate in the city and Zach and W went out too. I think we’re just going to have to give up on Tuesday’s for a while.

    Tonight—chicken is defrosting….



    FIVE dinners this week 2 years ago

    Sunday—Turkey shepherd’s pie
    Monday—Chicken with bacon, capers and olives (it sounds good, but was gross)
    Tuesday—Chicken tortilla casserole
    Wednesday—Costco chicken (close enough to homemade), broccoli, potato wedges
    Thursday—marinated flank steak, snap peas, baked potatoes

    Along with my buy-organic goal, I’m hoping that re-starting delivery from Pioneer Organics will help me cook at home more often—there really is no reason not to. I love to cook, I have a gorgeous kitchen and Le Creuset cookware coming out my EARS.

    This goal also ties in to my get-fit-lose-weight goals because DUH even eating smaller portions when we go out isn’t going to cut it.
