How I did it: i looked up simple recipes for curry and flatbread which required a lot of spices like coriander, cardamom and cumin, aquired the spices and cooked up some rice and vegan yogurt to go along with it. it was my first indian food ive cooked but id say it was worth it as a starting experience, and to inspire me to cook more often and stop being such a lazy bum in the kitchen. Just love it! Am pretty good but still rely on cookbooks. Want to be able to know regional specialities.
My best friend is from the Punjab region in Northern Indian, so she was very helpful in showing me a few dishes and getting the masalas right, maing chapatis, etc. I also got a few cookbooks to try out. My husband and I have loved the cuisine for years. An Indian restaurant was actually the first restaurant we went to when we first met, over ten years ago:) Now our favorite restaurant is an Indian all you can eat buffet. Its about the only place we eat out. I love being able to recreate a bit of it at home.

Well, I even have an Indian cookbook, I’ve tried my hand at making paneer cheese from scratch (one of my favorite things in Indian food), and I have successfully (on more than one occasion!) cooked rice without burning it. My big hangup seems to be jumping in and attempting to make a curry sauce (usually requires a lot of ingredients I don’t just have lying around) and putting it all together. I really want to learn how to make naan and samosas .. but again, these take time and special ingredients and will maybe have to wait until i have some time off from work …

I totally arranged for an Indian food cooking night with my friends, and one of them has parents that are super good at cooking Indian food. Ahhh!
I’ve been cooking lots of dishes from Madhur Jaffrey’s Indian Cookery book. I’d really recommend the masoor dal, chicken in a red sweet pepper sauce, whole leg of lamb in a spicy yoghurt sauce, moong dal pancakes with peas… In fact, I’ve been impressed with all her recipes. Started making yoghurt by adapting her recipe too. It’s been great to ring the changes and use some new spices.
So I think I can say now that I’ve done this goal. It’s aubergine cooked in a pickling style today, yum yum.
