It’s so hard to eat vegetarian! I’m such a carnivore. But I have managed to cook and eat as a herbivore… nearly. Except for cheese and milk. And eggs. And fish! You can’t take it all from me! So far I’ve made sauteed eggplant and butternut squash risotto. I’m going to make a tofu dish tomorrow.

Eating vegetarian feels good and is consistent with my “ahimsa” ideal, but I still eat some meat sometimes…so learning to cook vegetarian is what i need now. When I eat-out I find great veg dishes but at home I do not know where to start to have something veg & nice…Also I need to have enough energy and balance in what I eat in order to keep me healthy.
