It is the only way for me to be content with my choices. Veganism is so wonderful for so many different reasons!
How to go vegan and STAY vegan
How I did it: I had been vegetarian since elementary school, so it was a huge transition to vegan. When I first decided to become vegan, I checked out lots of vegan cookbooks and tried tons new recipes.
Lessons & tips: Having an open mind about food will take you a long way. Don't be
afraid to try new foods and be creative. And don't think that becoming vegan means "giving somthing up". I feel that my diet as a vegan
is far more varied than it ever was before, both as a meat-eater and a
vegetarian.

I’ve been vegetarian for about 6 years and i was a vegan for 2 but for this year “some reason” (munchies) i started eating dairy and eggs. I felt so much cleaner and better about myself when I was a vegan. As an animal lover it’s hard not to see myself as a hypocrite…
well i’ve been vegetarian for 4 years so i really want to take the next step now.
I went vegan, remained so strictly for at least a half year, then with the winter blues I slipped (snuck some dairy, ick—I’m lactose intolerant, so when I wandered from veganism to vegetarianism I paid for it in guilt and pain!), and am now going back to veganism. My other goal is to cook more often, which is definitely more easily motivated by a vegan diet, woo.
Pretty simple meal, but it was wonderful. Courtesy of the Vegan Dad blog, I whipped up his recipes for roasted corn guacamole (which I used on my veg burger along with tomato) and sweet potato fries. I didn’t have the right type of pan for roasting the corn and onions properly, so they were more sauteed than anything, but it was a great recipe (the fam, including omnis, polished the rest off with chips), as were the fries.
I also made Isa’s Vanilla Yogurt Pound Cake from Veganomicon, and made a strawberry garnish to go with it. Also wonderful.
I am no photographer so I chose the pound cake since I though the pic turned out better. :)
