I am outgrowing my kitchen! I probably have 50 great cookbooks and have been reading and trying to learn every chance I get. I just got the CIA knife book and their Professional Cooking book(thats massive!). There is a great local restauraunt and I have befriended teh chef- he said I could work in his kitchen anytime and he would teach me all he could. I just want to get my knife techniques down and brush up on my basics before I go down. There are few things as satisfying to me then to prepare and excellent meal for company

This is the chronicles of my future. I am a culinary student and opportunities are starting to present them self. The business of food is very tricky. Networking and pure talent. If you don’t love food you can’t do this job.

I have been baking breads lately. Nothing like a warm fresh made bread! I made a delicious foccocia bread the other day for a party and it got rave reviews. I recomend Peter Reinherts book “The Bread Apprentice” if you are interested in the art of making breads. I also ordered a butcher block which I am very excited about. It weighs over 300 pounds and will be the focal point of my workstation at home. I figure wood prices are gonna keep rising and now was as good as time as any to purchase. The wood is Lyptus wood- very ecofriendly! It is farmed and reaches maturity in 14 years. It is cut at its base and will grow 5 times from its stump- no need for replanting. It has the hardness of maple, the grain of mahogony, and the color of cherry.

I would love to become a great chef who could create great meals with whatever is in the fridge. I have been reading all the classic cookbooks and studying. There is so much to learn!
