Well, I’m glad I did it, and Wylie Dufresne is indeed a talented chef, but I was not as blown away as I expected to be. I got the tasting menu and each dish was definitely inventive and original, but I wasn’t as amazed by the flavors as I am at Nobu or Jean Georges. The exception was probably the desserts, which were as delicious as they were unusual. Nevertheless, I am glad I got to experience the legendary fried mayonnaise, which was, in fact, awesome. I’m also inspired now to use cucumber juice as a drink mixer.
