Well, first find/buy/steal a smoker (I use the “little Chief”), then acquire the following: a wire baking rack, two 1×2 inch boards, a cardboard box (With a slit cut out of the face near the top), and a cheese of your choice (I love sharp cheddar or Gouda).
Ready…
Fire up the smoker
Place the 1×2 boards across the top of the smoker.
Place the wire rack and the cheese (Cut into 1.5-2×3-4 inch blocks) on to the top of the smoker and 1×2 boards.
Place box over the top (1×2’s support the box from dropping back onto the smoker)
Keep Temps between 70F-120F.
Smoke for 50-90mins
