i’ve always love cooking since i was seven and i cant see myself not becoming a chef



I have a job! 17 months ago

I am filling in for the summer as a assistant to the pastry chef de partie at the Ramada Hotel and Conference Centre (Soon to be renamed to something I’m not allowed to say..i think)

Much of the food is pre-made and just needs to be defrosted or baked and then arranged. It’s not a hard job per say…just requires alot of organizing in your head and remembered details..

Next week I start my first day on my own!

Being in a kitchen is stressful.. But then again.. with my anxiety and depression, everything is stressful!

It’s hard being constantly surrounded by food. We get breakfast and lunch for free and have been eating alot of crap! I’m going to be a tubby tub by the end of the summer.

I’m not sure if the culinary arts are for me… I think I need things to be on my own terms..

like my own bakery..

But then again..maybe not?

Alright, so I just enrolled at Delta College. I am taking Food Prep and Baking and two Small Business online classes. I hope this works out. The Baking class is full, so I’m on the waiting list. If I don’t get into it I’m thinking of taking Photography this semester instead. I’m sooo excited, and nervus. January 14, 2008 school starts!



Is it for me? 2 years ago

My first job was in an artesian chocolate shop that specialized in belgian chocolate truffles. And I really enjoyed working in the culinary field. But I don’t know if it’s something I would like to do for the rest of my life. I mean, I do love to bake and do creative stuff, but…Anyway, I’m going to give it a shot and enroll at Delta Community College in the sprin and see how it goes.

Time for something new 3 years ago

I don’t want to be a chef, I just want to know about food. I want to understand where flavor comes from and how I can incorporate it into my cooking. I want to know all the herbs, spices, fruits, and vegetables. I want to know how to cook more than chicken! I want to be able to tinker with recipes and know what I’m doing.



Sous-Chef Wannabe...still 4 years ago

I was always interested in the culinary arts. Perhaps it was my mom who I can fondly remember that got me into this. I’d always be the right-hand man for the job whether it was beating eggs, separating the whites from the yolks, sifting flour or licking the mixing spoons of the left-over batter.

A few years after, I ended up mixing chemicals instead and got a degree in Chemistry. I majored in Physical Chemistry and started a career in research of novel materials. I’d say it’s somewhat close to cooking still, mixing stuff and coming up with strange useful stuff.
