My ex’s mum tends to generously overload me with spinach and callaloo from her allotment at this time of year, and I try to think of new ways to cook it, so here’s my latest:
Spinach with chickpeas
(I was going to make spinach curry, but started off wrong)
Saute onions, garlic, peppers and mushrooms, than add ground whole spices and cook them.
Put in the spinach, some chickpeas and tinned tomatoes, cook down, season and voila!
Eat with rice, hummus and sweet chilli sauce. In a black lacquered Japanese bowl.
invite others to do so, as well. I’ll have to get back to that, but here’s an snack for my list:
Sunflower (and/or pumpkin) seeds, dry-roasted with soy sauce. Salty and nice. My mum used to make these for us, and I give them to my boys now – ‘have these seeds got marmite in them?’ Ha ha.
